We all must have them - things that NPCs in games say that, for whatever reason, just jam in your memory years after playing the relevant game(s).
For me, they are often the most minor lines that I suspect most people wouldn't even remember.
A few examples:
1. The thugs in GTA Vice City's Little Haiti area that randomly start attacking you. One of their lines that has stuck in my head is "I want to hear you screeeeeaaam!"
2. Another Vice City one: the gang members in the Diaz mansion that keep saying, "You gotta clean your gun every day"
3. Spider-Man 2 (the movie game from PS2/GC/Xbox): the blokes in the mech power suits that appear during the random city crimes and say, "Outta the way! Comin' through!" and "Sure looks that way, don't it?"

From Resident Evil 4, the Merchant asking "whaddaya buyin'?".
And then when you buy the rocket launcher, "Stranger!?!"

9. "Old habits, Die Hard" - System Shock
10. "Your face, your ass. What's the difference" - Nuke Nukem - Duke 3D
11. "Hail to the King Baby" - Nuke Nukem - Duke 3D (originally from Evil Dead 3)
12. "I came here to chew bubble gum, and kick ass. And I'm all outta bubble gum" - Nuke Nukem - Duke 3D (originally from They Live)
13. "Who is Desmond?" - Assassin's Creed 2
14. "Not gonna happen" - Random thug - Full Throttle
15. "I said come in. Don't just stand there" - Buggy NPC - Stalker - Shadow of Chernobyl
16. "Itsa Me Mario" - Mario - Pretty much every game he's in
17. "You nearly became a Jill Sandwich" - Barry Burton - Resident Evil 1
18. "Want Some Rye? COURSE YA DO!!" - Alcoholic - Return to Zork
19. Evil laugh - Main bad guy in the intro for Might and Magic V: Darkside of Xeen. Coolest evil laugh I've ever heard in a video game.
20. "Stay awhile and listen" - Deckard Cain - Diablo 1

From Resident Evil 4, the Merchant asking "whaddaya buyin'?". Yeah, I still hear that whenever somebody uses a legit version of that phrase in a serious conversation i.e. "what drink are you buying?" and all I'll have in my head is Resi 4's merchant.
I also like, "Got somethin' that might interest ya..."
Also from Resi 4, in the cutscene just before the cabin shoot-out, when Luis says, "Eet's game time!" (has to be said in the latin accent though).

"It's a me, Mario!" Mario 64 was a revelation.
And now I realise it's NPCs...
"I've got a headache, and when you've got a head this big, it's no joke." Elvis (the alien) in Perfect Dark.
"Hey! Listen!" Probably a good reason that one's stuck in my head.
"Sometimes our sprites used to change size for no apparent reason." Cranky Kong in the DKC games had some great quotes.
"Do a barrel roll." Peppy in Star Fox 64. I hope everyone here has googled that phrase!
"Our princess is in another castle" is probably the earliest I remember.

The prompt to insert the second disk in Barbarian 2 on the amiga.
"Bernhardt, are you ready to spill their black blood?"
"let's paint the troll's land black!"
And a ton of other quotes frim Warhammer Dark Omen.

Its just some interesting potential opportunities for AI and automation to help and free humans in the future, rather than enslave us. We need General Zod to implement it.
