As the thread title says. Are there any games you'd like/love to see a 8 or 16 bit demake of.
For me:
* Cyberpunk 2077 * Dishonored 1 & 2 * Doom (original) * Metroid Dread * Mortal Kombat X * Street Fighter 4 * System Shock 1 or 2

Probably an 8bit demake of Doom (an overhead Alien Breed/Gauntlet style would work).

It's an interesting question. With such a gulf in technology, you are beyond making just mere compromises, the game has to be fundamentally altered. So, you have to think instead about what it is you're preserving about the demade game that still makes it the game that it is.
I've often thought (predictably) that a demake of Borderlands might be fun, but obviously it wouldn't be a first-person shooter, so in what way would it still be Borderlands? Well, I think you could certainly have a top-down rendition of the Borderlands environment, in particular the arid landscapes of the first game. The key, though, would be to preserve the combination of action and varied damage types that work better or worse on different enemies. Even with that level of complexity I think it would be beyond 8-bit computers, but it seems a feasible concept for the Megadrive/SNES.

A 16bit Demake of Yakuza Like a Dragon would be awesome, not only is the game awesome anyways but I think a demake of sort of SNES level quality could be cool

Maybe it's just me but I've never been interested in these, even though I am usually damn impressed by the work and love that goes into them.
I think I might go for modern sequels to retro franchises being demade in the style of the original games (like pratty's Pokemon suggestion above).
