I know with ET one of the reasons it wasn't great is because it was rushed out.... I suppose why not remake something that was bad and fix it to show what could have been.

Yeah, I'd think that given the time constraints, Warshaw did a pretty good job. It's far from the worst VCS game and quite an ambitious one given the limitations of the hardware. You've just got to put in a bit of work with it and - most importantly - read the manual before it starts to click.
The thing is, it's not like you couldn't write a VCS game in six weeks if you were an experienced developer like he was. The problem is rather that you'd have to nail it at the first attempt because there'd be no time to refine the game based on the experiences of other people playing it. You still see the same today with things like the GTA Trilogy and Cyberpunk. They've eventually been patched towards respectability but he never got that chance.

Isn't one of the problems with ET that it was too complicated for the hardware ie. he was writing a game for the Atari 2600 in 4k that really needed an Atari 7800 and 64k to work properly?

It's certainly an ambitious game for a machine that was only really designed to play mid-70s arcade games, but it's not really any more complex than Warshaw's previous game, Raiders of the Lost Ark.
Atari had, by that point, figured out how to make 8K cartridges by switching between multiple banks of ROM so he wasn't really that pressed for space either.
The thing is, Raiders and E.T. ended up being released at about the same time. One got a great reception, the other... er... not so much. With them both being movie adaptations from the same developer, the most obvious difference is the time he had to write them.

And Raiders of the lost Ark is actually a game that I would like to see remade. It would be great even by j just using a modern controller, instead of the VCS twin joysticks.

Yeah the fact the average controller now has like 3 times everything an Atari Joystick has (and more) would make for a good change.
